About the Author

Hannah Crum is the co-author, with Alex LaGory, of The Big Book of Kombucha. Together they created Kombucha Kamp as a one-stop destination for the highest quality brewing supplies, information, and support. They are co-founders of Kombucha Brewers International in Los Angeles, where they reside. Known as “The Kombucha Mamma,” Crum is a featured speaker on kombucha at consumer and corporate events nationwide.


Alex LaGory is the co-author, with Hannah Crum, of The Big Book of Kombucha. LaGory is a writer and producer who, with Crum, mentors kombucha homebrewers and serves as a commercial brewing consultant. Together they created Kombucha Kamp as a one-stop destination for the highest quality brewing supplies, information, and support. They are co-founders of Kombucha Brewers International in Los Angeles, where they reside.

I have been a Kombucha fan for a number of years and began brewing my own earlier this year - using a kit I purchased online. My initial batch was a great success and I am now up to 5 Scobys - hence multiple batches on the go at any one time; and have become more adventurous trying new flavors, combinations and secondary fermentation.

I own a couple of different books but so far this has been the hands down favorite. It is a good book in particular for those new to brewing and contains everything from the history of this delicious elixir, to brewing ingredients, tips, flavoring and using your Kombucha in cooking. In the past I have found the many books go too far one way -such as things to use your Kombucha in, or the other way -very basic tips, and do not strike the happy medium that allows the book to be an all around guide. This however meets that requirement.

The book begins with a little about the authors and how they began their Kombucha “journey”. I found it well written and a good read - and I could identify with this more (for example trying it at a party and off the shelf at Whole Foods) than the folks that found it in some mysterious part of the world! It sounded a lot like my initiation into the world of Kombucha and the fact that it was relatable made me like the authors a whole lot more!

The book then goes into an all around look at fermentation which was appreciated, as this area of food and drink is certainly building more momentum of late as the health benefits are realized. This is followed by an in-depth discussion around kombucha, the Scoby, and ingredients / supplies that are instrumental in the Kombucha making process. This is very detailed and great for those new to brewing. I particularly loved the comprehensive guide to the health properties with personal stories incorporated into this; and they took the time to include health cautions too making it a balanced approach.

The Scoby guide is hands down the best I have read / seen. Scobys can be rather ominous in appearance and I cannot tell you the number of times I have peered into my jar trying to determine if it’s healthy or if the weird patch of color /texture is mold (so far it has not happened); but the pictures were exceptional in detail and levels of helpfulness. Thank you authors for this; and including so many detail photographs!

The tea guide was also very detailed and useful -talking about types of blends you should and should not use, and acceptable quantities before they become too much for the balanced of the Kombucha, The sugar guide was equally as useful; as was the equipment guide, as I now know I should not have used that cheesecloth as a cover when in a pinch (allows contaminates to get in your brew). This is then followed by the meat of this book – how to brew, best practices and different methods one can use. For me the advanced guide was so helpful -how to flavor, as we are currently experimenting with secondary fermentation using cascade hobs, and carbonation, as striking that right balance has been an admitted challenge; and other books have simply not been detailed enough, leaving me having to turn to good old Google -this book solves that!

The remainder of this book is a guide to flavors one could experiment with, drinks one can use this in -such as cocktails and shrubs -both of which are hands down amazing with the addition of Kombucha! And other means of cooking / recipes in which you might be able to incorporate Kombucha. This covers everything from dressings, dips and cake -to outside the kitchen; in face masks and creams! Few books are this comprehensive or diverse!

The book ends with more of the Kombucha story; but most usefully a very detailed guide to components of Kombucha, specific health concerns and how the consumption of Kombucha might help; further reading guides and a brew log, which is very useful for new brewers.

Having now owned about 5 different books on the topic including those by Eric Childs and Stephen Lee, this is by far my favorite. It is detailed, comprehensive, and covers everything you need to know and then some. I would say this is invaluable for new Kombucha brewers and even useful for those who have been brewing a while and need some new inspiration. I love this book! And full disclosure…yes I am a top reviewer, but no I did not receive it for free -I paid in full for this as it was much wanted, and it was worth every penny!!

Hannah Crum changed my life. I bought my first Kombucha home brew ''starter kit'' from her over four years ago and have been happily brewing my own ''booch ever since. This big (383 page), bold and beautiful book is full of a wealth of first-hand information on all aspects of Kombucha that Hannah and her partner Alex LaGory have curated over their years of involvement with the Kombucha sub-culture.

From the history and science of Kombucha to straightforward guidelines on the many aspects of brewing, decanting and flavoring this healthful fermented tea, Hannah and Alex cram an awful lot of really useful information into this book. I was especially impressed with the full color photographs of typical brews (taken of clear glass jars to show the yeast strands, fermentation process and various colors of healthy and unhealthy SCOBY''s). There''s ample information on troubleshooting everything from mold to poorly performing brews, as well as scientific guidelines on brew temperature, acidity, sweetness and suggested tea mixes.

The second part of the book offers a huge range of recipes for flavoring, cocktails, smoothies and more, She even suggests intriguing ways to consume old growth SCOBYs (jerky, face masks etc.)

This is the book I wish I''d had four years ago. I intend to take a close look at my current hit and miss production methods and implement their suggestions to improve things.

If you love Kombucha and are getting tired of paying $3-6 a bottle for the retail brands, invest in a copy of Hannah and Alex''s book and get brewing at home. It just might change your life.

Ok, so I haven''t read any other books on the subject. I researched kombucha books and read dozens of reviews on several of them prior to ordering this one. The Big Book of Kombucha far exceeded my expectations. I had never brewed kombucha and I was a little nervous about it. I had googled it and it seemed both simple and complicated to me -- depending on the source.

This book is perfect for the first timer. It answered all my questions. The author included pictures of the SCOBY in every stage of the process which took a lot of the guess work and worry out of it. Without that visual, I might have assumed my brew was ruined at certain points.

The book is visually beautiful and enjoyable to read. You can use it as a reference book or you can read the whole thing. She includes information about the history of kombucha as well as advice about which ingredients work best, step by step instructions, troubleshooting, all kinds of recipes, how to care for your SCOBY and more.

My first batch turned out better than I expected. It wasn''t GTs quality but it was still delicious. I would like mine to be a little stronger and would like a little more fizz. I think I will be able to tweak these issues though. I was concerned about my bottles exploding during the second ferment (this can sometimes happen), so I kept burping the bottles and probably killed the fizz. I have my second batch about ready to bottle. I won''t burp them as much this time.

On a side note: I ordered my SCOBY and a few other items directly from Kombucha Kamp (the author''s website). I''ve ordered 3 times and each time I received shipment notifications within HOURS of placing my orders and my orders arrived within a couple of days. The SCOBY was big, beautiful and healthy and the ingredients I ordered were top quality. I love everything about this company.

So this book is long that being said for me as a new brewer there isn''t much beneficial information. There is only small sections that pertain to brewing. Most of the book is filled with history of kombucha, benefits of kombucha, recipes for flavored kombucha, and about the author which I could really careless about any of that. It misses out on some important things that I would like to know as a new brewer. I would like to know more about PH levels and what they should look like, what the actual brix reading should be for a completed brew, if it is normal for moisture to be on the inside of my brewing vessel when using a belt heater on my jar.

I think this book was miss-named. It should be called the Bible of Kombucha since this is the book you return to again and again as you continue your Kombucha adventure. Every page is a revelation.

I''ve been brewing this stuff on and off for many years. Why not consistently? Well, I don''t know, perhaps I was not really aware of the all the benefits of the stuff and you hear so many conflicting stories. I mean is this stuff really good for you and all of that? Well, these guys have done the research and they take away the mystery about kombucha and you learn some really wondrous stuff about this delicious, healthful brew.

So now I am really excited about brewing on a regular basis. I even ordered one of their SCOBYs because I am confident in the quality from these master brewers. For years I''ve been preparing this brew a certain way: boiling a gallon of water, boiling in the sugar then putting in the tea bags to let it steep for 15 minutes and then setting the pot on the counter for hours to let it cool so you can put it in a gallon jar into which you put your SCOBY. Every time I''ve ordered a SCOBY from somewhere else these are the instructions.

Well, these guys simplify it. Just boil a quart of water, steep the tea, stir in the sugar and then pour that into the gallon jug and fill it will cool water. All this can be done in a matter of minutes, instead a waiting around for hours for the mixture to cool off. Makes preparation a heck of a lot easier.

I also learned that you are not supposed to refrigerate your SCOBYs, that it''s best to keep them in a "SCOBY hotel" so the cultures stay active and vibrant. I''ve been refrigerating them which is probably why I''ve had so much trouble with my brews.

But the best part of the book which is where they spend the most time on is flavoring your batch, and that can be done in the original fermentation and/or afterwards. So they give all kind of wonderful ideas for this. I got a batch going right now with hibiscus, never thought about doing that. They got recipes for desserts, smoothies and alcoholic drinks made with the kombucha which look really delicious. They even got a recipe for making kombucha brewed with coffee! Can''t wait to try that and can''t even imagine what the heck it''s going to taste like.

My mom, who is 102, lives with me and I’ve been giving her apple cider vinegar in the mornings and just switched her to kombucha. I am going to have to have 2 batches going now and can’t wait to try the flavorings on her.

So if you are just starting your kombucha journey or are an old pro don''t hesitate to get this beautiful book. Brewing kombucha is a great, fun, healthy and life-giving hobby. The stuff you''ll brew will be so much better than what you can get in the store because it is raw and full of healthy bacteria that your body really needs. This is the book you need for all things kombucha. Get it, you will not regret it.

As a fairly new Kombucha brewer who researched extensively online, I figured this book would be somewhat remedial but ended up purchasing it anyway. I am very happy I did. While some of the basic information is somewhat simplistic to anyone who has experience, there is an abundance of information that isn''t as common. The multitudes of recipes are absolutely wonderful, as well as all of the other uses for the tea and the pellicle. I recommend it for anybody who brews KT, rookie or veteran. Even the book itself is very well made and produced. I leave it sitting on a coffee table as it is very aesthetically pleasing and a great conversation piece for company.

I came across this book because I had been reading Hannah Crum''s website/blog - a great learning resource in itself - and immediately ordered it. The book''s instructions are easy to follow, there are tons of great flavoring recipes in it, some of which I''ve already tried, and it has a lot of other interesting information about kombucha to boot. Very easy reading. My first batch of kombucha came out a little too sweet but every batch after that has been perfect, thanks to this book! I even like mine better than the store-bought varieties. Now that I''ve made several batches, it''s easy and fast to make more, and I still refer to the book for the flavoring recipes. It''s my kombucha bible.

Be warned though: it is riddled with medical, pseudoscientific mumbo-jumbo, the like of which charlatans use to sell snake oil to admirers of Gwyneth Paltrow. There are many mentions of scientific nonsense that ring alarm bells such as: "acidic ash"; "powerful detoxifying properties"; "natural remedy"; "healing crisis"; "take baths; they aid in detoxification"; "stay away from chemical cleaners and artificial scents"; "adaptogenic tonic"; "balancing the immune system". I could go on; there are many more. If you have a scientific education, or even a reasonable high school education, this book will annoy the hell out you - as it did me. Here are some direct quotes: "Freshly trimmed pieces of healthy SCOBY make excellent bandages for cuts or burns", "At this stage you have the option to say a prayer, send good vibes, or otherwise commune with your new brew. It is a culture of living organisms and responds to energy - positive and negative.", "Municipal tap-water supplies are controlled by local government agencies. Tap water nearly always contains chlorine and other additives that make it ''safe'' to consume." Having previously brewed only the original flavour, I''m now working my way through Hannah''s numerous really simple recipes and even creating my own flavours too. I recently decided not to buy recipe books in Kindle format as they tend to be hard to navigate and the illustrations are often disappointing. So I''m delighted that this paperback ''tome'' is very attractively illustrated and laid out. Well done and thank you, Hannah!

Overall, excellent book . So much useful info. Much detail. Very well referenced (even goes into detail about scientific studies on kombucha, health benefits etc. instead of just using vague phrases like ''''helps detox'''' without citations). Large index in the back is very helpful too. Clearly written by somebody who loves kombucha as much as I do and has really done their homework. The only way this book could be even better is if it had a ''''beginners...quick start'''' section. Beginners info seems a bit mixed up with everything else. I would prefer a section that has the basic recipe, troubleshooting, list of equipment, pros and cons of each type etc. all in one clear section. That''s the only reason I gave it 4 instead of 5 stars, Other than that, can''t fault it. This book is clearly a labour of love and I expect it to be something I use and enjoy reading (e.g history of kombucha pages) for many years. Overall well worth it + will look out for other books by this author.

Really useful book, I know some have said it''s too informative (is there ever such a thing), I like drilling down on the deets and understanding why things are happening. Anyhoo it''s a great book and worth every penny, with website backup for support. I use it all the time and upgraded to a 5 ltr brewing vessel to make more booch. On a health note both myself and hubby have felt so much better since drinking booch every day, a few health issues like candida have cleared up and we''ve stopped craving sweet stuff.

I appreciate all the scientific research and medical, historical and folkloric information, but really just wanted to know how to make good kombucha.
